{VIDEO} Easy No-Bake Ice Cream Sandwich Cake with "Melting Cone"



A super impressive fancy ice cream cake, that is so easy to assemble, requires NO baking... and it’s a lot cuter and cheaper than a store bought ice cream cake!


This Ice Cream cake is made out of ice cream sandwiches, layers of chocolate fudge, crunchy oreos and rainbow sprinkles. It's smothered in smooth whipped topping, and topped with a fake melted ice cream cone made out of crushed cookies and chocolate fudge!


The best part is, you can make it with any type of ice cream sandwiches and toppings you want, like caramel sauce, marshmallow fluff... I've even made it with neapolitan ice cream sandwiches before, and filled it with fruit, for a fun twist!


All you need is some ice cream sandwiches, whipped topping, and ice cream topping essentials.


 It is so easy, just layer 3 ice cream sandwiches on a plate. Spread on a layer of chocolate fudge, a layer of whipped topping, and some crushed oreo cookies and rainbow sprinkles on top. Place 3 more ice cream sandwiches on top, and repeat the layering until the last 3 ice cream sandwiches are on top.


Then, frost the cake with the remaining whipped topping. 


Wipe away any excess whipped topping around the bottom of the cake and place it in freezer for 3-4 hours or until firm.


In the mean time, create the “melted ice cream cone” cake topper. Just combine the remainder of the crushed cookies with 1-2 tablespoons of the chocolate fudge and form a ball/melted ice cream scoop shape on a plate lined with wax paper. Then, thin out the remaining fudge with a few tablespoons of water, stirring until you have a thick pourable consistency (similar to the consistency of white glue), and cover the cookie ball. 


Press on an ice cream cone on top and place in the freezer with the cake until the cake frosting has firmed up and you are ready to assemble. This can all be done in advance or the night before.


Pour the chocolate fudge on top of the cake, spreading it across the top, allowing it to slowly drip down the sides and place your “melted ice cream cone” on top 


Add sprinkles and a cherry on top and you are done! 


Place it back in the freezer until firm and ready to serve, or slice and enjoy.

Ingredients
  • 12 ice cream sandwiches 
  • 12-16 oz. tub whipped topping, thawed in the fridge 
  • 1 jar of hot fudge ice cream topping 
  • 12 oreo cookies, crushed 
  • rainbow sprinkles 
  • 2 tablespoons water 
  • ice cream cone 
  • cherry 

Directions

Unwrap a box of 12 ice cream sandwiches. Place 3 ice cream sandwiches on a plate. Spread on a layer of chocolate fudge, a layer of whipped topping, and some crushed oreo cookies and rainbow sprinkles on top. Place 3 more ice cream sandwiches on top, and repeat the layering until the last 3 ice cream sandwiches are on top.
