Cinnamon & Brown Sugar Waffles
Servings: 6 waffles
Ingredients
- 2 cups all-purpose flour
- 1/4 cup brown sugar
- 4 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 1/2 cup warm milk
- 2 large eggs, separated, room temperature
- 1/2 cup melted butter or vegetable oil
- 1 teaspoon vanilla extract
Preheat waffle iron. Whisk together the flour, sugar, baking powder, cinnamon and salt in a small bowl. In a mixing bowl, whisk together the milk, egg yolks, melted butter and vanilla. Stir in the dry ingredients.
In a separate bowl, beat the egg whites until stiff peaks form. Gently fold into batter.
Spray preheated waffle iron with non-stick cooking spray. Pour about 2/3 cup batter onto waffle iron. Cook waffles 3-4 minutes until cooked through, or follow waffle iron manufacturer’s cooking instructions.
