Mini Pumpkin Banana Pancake Bites

Servings: Makes about 24 mini pancake bites

Prep Time: 8 minutes

Cook Time: 12 minutes


Ingredients:

1 cup pancake mix (I use this, just add water, protein pancake mix: https://amzn.to/48yRRKo)

1/2 teaspoon cinnamon or pumpkin pie spice

1/2 cup canned pumpkin puree

3/4-1 cup water or milk of choice

2 bananas, sliced into 1/4-inch thick coins

Cooking spray or melted butter for greasing the pan



Instructions:

In a bowl, combine the pancake mix, pumpkin puree, water or milk, and pumpkin spice. Mix until just combined; don't overmix.

Preheat a non-stick pan or griddle over medium heat. Lightly grease with cooking spray or melted butter.

Using a fork, dip a slice of banana in the batter and place onto the grease pre-heated pan.

Cook for about 2-3 minutes per side, until golden brown.

Transfer the cooked mini pancakes to a plate and let them cool slightly before serving.

Top with maple syrup, if desired.
