My microwave mug recipes are some of my favorite desserts to make when I need a quick and easy dessert fix. I've tried tons of recipes, but this banana bread, with a touch of warm cinnamon is THE BEST!





This recipe creates the perfect batter to ensure your bread wont get nuked by the microwave, using oil, with the addition of banana keeping it really moist and flavorful! Even though I am a huge chocoholic, I think this is one of my favorite treats! And because there is no milk or butter this bread can be made vegan!



The ripeness of your bananas will determine how naturally sweet your bread is, so make sure your bananas are extra ripe, and I mean R-I-P-E! Think, covered in brown spots, too ripe to eat, about to throw it away, ripe. That means it is at the peak of sweetness, the riper the better! This will ensure the banana is ultra sweet, soft, and packed with a more intense banana flavor, than a regular yellow banana, making them perfect for this recipe!


If you're anything like me, you forget to plan ahead and buy the bananas in advance so they can ripen to the perfect level. Watch my video below for my trick to get you perfectly ripe, super sweet and soft bananas for the recipe, by releasing the natural sugars in the oven at a low temperature.


Just mix all the ingredients together right in a mug.



Cook in the microwave on 50% power until done, and eat it right out of the mug!






Even add your choice of chopped nuts or chocolate chips, and slice it up on a plate!



3-Minute Microwave Banana Bread in a Mug

Yield:
1 serving

Ingredients

  • 1/3 cup very ripe mashed banana (1 small banana)
  • 3 tablespoons packed brown sugar
  • 2 tablespoons vegetable oil*
  • 1/4 teaspoon pure vanilla extract
  • 4 tablespoons flour
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon baking soda
  • pinch salt
  • 2 tablespoons chocolate chips or chopped nuts, optional
*May sub half of the oil with equal parts apple sauce, for a low fat alternative.


Directions

Spray a microwave safe mug with non-stick spray (or skip this step if you want to eat your bread straight form the mug). In the mug, stir together banana, sugar, oil and vanilla with a fork. Add flour, cinnamon, baking soda, and salt. Mix until combine. Stir in chocolate chips or nuts if desired.

Microwave on 50% power for 1 minute, cooking an additional 30 seconds at a time, at 50% power,  until toothpick inserted comes out clean or with a few moist crumbs. About 1-3 minutes total. Do not over cook or bread will come out dry and rubbery. Serve immediately.
