Brownie Sundaes For Two

After making my individual cookie sundaes and my individual apple crisps, I had to recreate the idea in brownie form for all you chocolate lovers out there (and because Valentine's Day is coming up and this would be a perfect way to impress that special someone *wink*wink*). This mini-batch recipe for "Brownies for 2" is quick and simple to put together.




The fudgy brownies bake up perfectly in individual ramekins and topped with ice cream, a cherry and the works, and you have two incredibly easy and delicious brownie sundaes great for a weekend treat for the kids or a romantic dessert for 2. The recipe also doubles easily if you want to make more.



Brownie Sundaes For Two

Yield: 2 individual brownie sundaes 

Ingredients
  • 1/4 cup (1/2 stick/56g) butter, melted 
  • 1 tablespoon vegetable oil
  • 3/4 cup (150g) granulated white sugar
  • 5 tablespoons (25g) unsweetened cocoa powder
  • 1/8 teaspoon salt
  • 3/4 teaspoons vanilla extract
  • 1 large egg
  • 1/4 cup (30g) all-purpose flour, weighed or spooned and leveled
  • 1/4 cup chocolate chips
  • 2 scoops of ice cream 
  • Toppings of your choice; whipped cream, chocolate syrup, sprinkles, cherry, etc.

Directions


Preheat the oven to 350 degrees F. Spray two 7-8oz. ramekins with nonstick spray (mine were 7oz., 3 1/4" wide and 2" tall).

Stir together melted butter, oil, sugar, cocoa, and salt in a medium mixing bowl. Add the vanilla and egg, stirring vigorously until batter becomes thick, smooth and shiny. Stir in flour until just incorporated. Mix in chocolate chips. Pour batter into prepared ramekins.


Bake for about 35-45 minutes. An inserted toothpick will come out with moist crumbs sticking to it. Do not over bake. Cool brownies slightly on a cooling rack before cutting. Top warm brownies with ice cream and toppings of your choice. 







I baked mine in a toaster oven for convenience since there were only 2, but a regular oven works just as well.
