Glazed Doughnut Pancakes (and doughnut hole pancake bites)

I am really excited to share this fun breakfast treat with you just in time for the weekend! My Glazed Doughnut (or should I say "faux-nut"?) Pancakes are a super fun way to serve pancakes for birthdays, sleepovers or special occasions.


These pancakes were born when I wanted to make a special occasion breakfast but had NO SYRUP!  After I ruled out the option of a fun pancake or french toast recipe, I got to thinking of other popular breakfast treats. Now, I didn't have the time to make a yeast risen cinnamon roll and I have already created Homemade Mini Pop Tarts and Simple Biscuit Doughnuts... but those glaze drizzled treats got me thinking... What if I made a sweet creamy glaze and spread it over pancakes... shaped like doughnuts... and topped with sprinkles?! And there I had it, Glazed Doughnut Pancakes... Miniature, silver dollar sized, of course. Would you really expect anything else from me ;)

They are as simple to make as regular pancakes... First make the batter (box mix or my simple recipe below).


Next, I tried a few different ways of making the donut shape. First I tried cooking icing tips in the center... FAIL. Then I tried piping the batter in a circle on the pan... FAIL.

Finally, I just tried making regular silver dollar sized pancakes and figured I could punch out the center to create the donut look, after cooking... WIN!


After your pancakes are cooked, cut a hole out of the center of the pancakes to create a donut shape. I used the end of an icing tip but you can use any round circular shape to punch out the centers, like a bottle top or whatever you have on hand.


For the glazes, simply combine all of the ingredients and stir with a fork until smooth, adding more liquid as necessary. I kept my glaze pretty thick, but you can microwave it for just a few seconds if it starts getting too thick.



Top with SPRINKLES!


Toss the "doughnut hole" centers in powdered sugar or cinnamon sugar for snacking!


OR you can even coat your doughnut pancakes in powdered sugar or cinnamon sugar and skip the glaze all together!



To make these I simply added a little nutmeg to my favorite buttermilk pancake recipe and topped them with my perfectly simple donut glaze. I made small silver dollar sized pancakes but you can make regular sized pancakes if you prefer.



Glazed Doughnut Pancakes (and doughnut hole pancake bites)


Yield: about 12 silver dollar pancakes

Ingredients 

Pancakes:
  • 1 cup pancake mix*
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • non-stick spray or butter for griddle/pan

    *May sub 1 cup flour mixed with 1/2 teaspoon baking soda and 1/4 teaspoon salt
Glazes/Coatings:
  • Vanilla Glaze
    • 1 cup powdered sugar, sifted
    • 1 tablespoon unsalted butter, melted (optional)
    • 2-6 teaspoons cream, half & half or milk
    • 1/2 teaspoon vanilla extract 
  • Chocolate Glaze
    • 1 cup powdered sugar, sifted
    • 3 tablespoons unsweetened cocoa powder
    • 1 tablespoon unsalted butter, melted (optional)
    • 3-6 teaspoons cream, half & half or milk
    • 1/2 teaspoon vanilla extract
  • Cinnamon Sugar  (1/2 cup sugar + 1 tablespoon cinnamon) and/or Powdered Sugar, optional
  • Rainbow Sprinkles

Directions

Place a non-stick skillet over medium-low heat. Whisk together flour, sugar, baking powder, baking soda, salt and nutmeg in a small bowl. Add melted butter, egg and vanilla into milk. Pour the flour mixture into the milk mixture and gently whisk until just combine. The batter should be thick and slightly lumpy. Do not over beat the batter, this will result in tough, dense pancakes. 

Grease griddle/pan. Pour 2 tablespoons of batter 1-2 inches apart on pan for mini silver dollar size pancakes (shown), or 1/4 cup batter for larger pancakes. Flip pancakes over when they start to bubble on top and are slightly dry around the edges and golden underneath. Cook until golden on bottom. This will take less time than the first side to cook, about 1 minute. Repeat with the remaining batter. 

Punch a hole out of the center of the cooked pancakes to create a donut shape. Coat "doughnut hole" centers in cinnamon sugar or powdered sugar if desired. 

For the glazes, simply combine all of the ingredients and stir with a fork until smooth, adding more liquid as necessary and top with sprinkles (OR choose to coat your donuts in cinnamon sugar or powdered sugar).
