Crispy popcorn chicken, coated in spicy buffalo sauce is balanced out with a drizzle of creamy ranch dressing and cool blue cheese crumbles, all on top of a fluffy little belgian waffle bite and topped off with crunchy green onion.
This twist on the classic chicken and waffles dish is so much fun and a total crowd pleaser! Serve it as a party appetizer, a game-day snack, or even turn it into a special occasion breakfast for dinner.
Since football season began, I have been on a total buffalo kick, since it is my soon-to-be hubby's all time favorite. Last week I made him a super simple, buffalo chicken flatbread pizza, in about 15 minutes, that he devoured. Today I wanted to switch it up and do a fun play on chicken and waffles... BUFFALO STYLE!
The recipe comes together with a bunch of store bought items, for a really simple, yet impressive treat! I used my favorite box of Krusteaz Belgian Waffle Mix, to make a batch of the best fluffy waffles ever, but in miniature size and a bag of frozen popcorn chicken that I coated with some store-bought buffalo sauce, then I just garnished it with the finishing touches and they're done!
To make the waffles miniature, I just scooped a tablespoon of batter into the corner of each section of my waffle iron. They come out in a really awesome, rustic looking shape this way and are the perfect size for the popcorn chicken!
While the waffles cook, coat the cooked popcorn chicken in some buffalo sauce.
Then, assemble the chicken on top of the waffles and drizzle on some ranch dressing. I put my ranch in plastic sandwich baggie and snipped the tiniest bit off the corner to drizzle it on top, but you can also just use a fork to drizzle it on, or even spoon a little bit of dressing right on top.
Lastly, add some crumbled blue cheese and chopped green onion to finish it off!
You can secure them with a toothpick if desired, for easy to grab appetizers or plate them up on a platter for serving.
How cute are they?! And they look so professional... no one will ever know if took like 10 minutes to put these together ;) I like to serve these little guys with some celery, ranch and a little extra buffalo sauce and ranch for dipping.
Buffalo Style Chicken & Waffle Bites
Ingredients
- 1 1/2 cups Krusteaz Belgian Waffle Mix, plus ingredients called for on box
- 24 frozen crispy popcorn chicken bites, cooked to package directions
- Buffalo wing sauce
- Ranch dressing
- Blue cheese crumbles
- 1 green onion, chopped
Directions
Heat and lightly grease waffle iron. Prepare waffle batter according to package directions. Pour about 1 tablespoon of batter onto the corner of each quadrant of the waffle iron, to create mini waffle bites. Cook waffles 2-3 minutes until golden brown (or follow waffle iron manufacturer’s cooking instructions). Place waffles on a plate.
In a bowl, toss the chicken in buffalo wing sauce, until fully coated. Place one chicken bite on top of each mini waffle and top with a drizzle of ranch dressing, blue cheese crumbles and sliced green onion. Use a toothpick to secure, if desired
