{VIDEO} EASY Chocolate Covered Saltine Toffee

A salty crisp layer of saltine crackers are coated with a sweet, crunchy, melt-in-your-mouth toffee, finished off with a layer of chocolate spread over the top and garnished with toppings.

You guys!! This could quite possibly be one of the most addicting things I have ever tried and it is so cheap and easy to make too! The ingredients are super simple too.

The base is a pack of saltine cracker. Then a 3 ingredient toffee mixture bubbles on the stove top, some chocolate chips are melted on top, and it is all finished off with some sprinkles... really... it is that simple!

First, just line a cookie sheet with parchment paper and place a layer of saltine crackers in a layer on top.

For the toffee, just throw some butter and sugar in a pot on the stove.

Boil the mixture for 3 minutes and then stir in the vanilla and you have got yourself some amazingly buttery sweet toffee, ready for pouring. The trick to getting that crunchy toffee is letting the mixture boil, without stirring, so it reaches, what we call in candy making, the "hard ball stage". This will take about 3-4  minutes. When it cools, it will turn into a crunchy, buttery, sweet brittle coating for the crackers!

 Pour the toffee mixture over crackers right away! Don't worry if all crackers are not covered, as the mixture will spread after baking.

Bake for 5-7 minutes in your preheated oven to get the toffee to spread into an even layer across the crackers... like beautiful sugary glass!

Sprinkle chocolate chips on top and watch them start to melt into ooey gooey, smooth chocolate goodness.

As they start to melt, I use a small offset spatula to spread it over entire surface, but a knife will work too.

When it looks like an ice skating rink of perfectly melted chocolate, you are ready for the toppings!

I chose to add sprinkles on top, but you can really add any sort of crushed cookie, candies, chopped nuts, shredded coconut... what ever you are in the mood for.

Pop it in the fridge until it cools and hardens and you are ready to break it apart. 

Here is a look of the beautiful bottom once the toffee has set and hardened.

At this point you can cut into it into squares or just break into large shards.

I used the crackers as a guideline for cutting, but any shape or size will work. Serve and enjoy!

Chocolate Covered Saltine Toffee

Yield: 45 toffee squares

  • 1 (4oz) sleeve saltine crackers (35-45 crackers)
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed dark brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups (12 oz) semisweet chocolate chips
  • 1/2-3/4 cup topping of choice; sprinkles, chopped nuts, shredded coconut, crushed cookies, small candies, etc.


Preheat oven to 400 degrees F. Line a rimmed baking sheet with parchment paper and place a layer of saltine crackers in single layer.

In a saucepan bring the butter and sugar to a boil over medium heat. Without stirring, boil mixture for 3 minutes. Remove from heat and immediately stir in vanilla and pour over saltines, spreading to cover crackers. Don't worry if all crackers are not covered, as the mixture will spread after baking.

Bake for 5-7 minutes. Remove from oven and sprinkle chocolate chips on top. Let chocolate sit for 5 minutes so it begins to melt. Spread over entire surface and sprinkle on toppings of choice. Place in the fridge for 2-3 hours or freeze about 20 minutes until completely cooled and solid. Cut into squares or break into pieces. Store in an air tight container at room temperature.
