THE BEST Guacamole

Thick, chunky yet creamy guacamole, studded with beautiful specks of juicy tomato, spicy green chilis, crunchy bits of sweet red onion, and a little tang from fresh lime. Seasoned to perfection with my secret blend and all finished off with a little cilantro. Perfect.



This stuff is seriously sooo addicting and could not be more simple to throw together for an outdoor BBQ, Cinco de Mayo party, simple dinner side dish or family gathering.

 

It starts with beautiful, fresh, and minimal ingredients. Juicy, creamy, crunchy and my special blend of seasonings all ready to go! I like to cheat a little and use a can of diced tomato with green chilis already diced up and ready to go, but fresh tomatoes and a chopped green chili or jalepeno would work just as well. 


I add the lime first to coat the avocado for easier mashing.


Then come the seasoning. The salt and pepper are necessary, but the little addition of garlic powder and hint of earthy cumin really take this guac to the next level! I add this all in before any of the chunky stuff to make sure it gets evenly distributed amongst the avocado as I begin to mash away.


Finally, I mash in the last avocado and the rest of the ingredients to create a nice thick and chunky bowl of confetti delicious-ness.


I had to use restraint at this point and not devour the whole batch before the guests arrived. My perfect guacamole complete in just minutes! Now to arrange the vessel in which I use to scoop the guac from the bowl to my mouth... chips and carrots! You can also use pita chips, celery or any dipping item of choice.


I could seriously eat this stuff by the bowl-full... which is why I like to throw in the option of serving it with carrots, for a healthier option to inhale this perfect guac with.


With some skinny margaritas and a plate full of chips, you have got yourself a perfect party appetizer!



Perfect Guacamole

Ingredients
  • 3 avocados, halved and pitted
  • juice from 1 lime (about 1 tablespoon)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder (or 1 minced clove)
  • 1/4 teaspoon cumin
  • 1 (10oz) can diced tomatoes with green chilis (or 2 Roma tomatoes and 1 green chili or jalapeno, seeded and chopped)
  • 1/3-1/2 cup diced red onion
  • 2 tablespoons fresh cilantro, chopped 

Directions 
Scoop the avocado into a medium sized bowl. Gently mash together the avocado, lime juice, salt, pepper, garlic powder and cumin, leaving some chunks if desired. Fold in tomatoes/chilis, onion and cilantro. Cover and refrigerate for 1 hour. Serve with tortilla chips or carrots.
