{VIDEO} 2-Minute Microwave Pancake Muffin in a Mug


A single-serving fluffy pancake in a mug, right in the microwave, in under 5 minutes! 



So if you are in the mood for pancakes, but don’t want to spend the time cooking over the stove or washing dishes, this recipes is so easy, and creates the perfect grab-and-go breakfast in no time. 


It starts with just 3 ingredients, pancake mix, water and a tablespoon of melted butter.


You can also just use a tablespoon of oil instead if you prefer but I find that butter gives a better flavor.


Then, gently stir everything together with a fork until the batter is just combine. It’s ok if it’s not perfectly smooth, we just don’t want to over-mix it, so it doesn’t get tough, and bakes up nice and fluffy. So this is your base recipe for a plain buttermilk pancake muffin, buuut, if you want to take it one step further, this is where you can add in about 1-2 tablespoons of any type of mix-ins you want, like chocolate chips and sprinkles...

Then, it’s ready for the microwave. Now, my trick for making microwave dessert recipes, is cooking at 50% power so it doesn’t nuke the ingredients and make them dry and rubbery.



So, just going to pop it in the microwave for about 1-2 minutes on 50% power and it done.



Now, all microwaves vary, so depending on what wattage your microwave is, it’s going to to take a little more or a little less time to cook. So start with a minute and add about 15 seconds at a time if you think it needs to cook through a little more. But these are generally going to take between 1 and 2 minutes until batter has just cooked through and is no longer wet. Just make sure you don’t overcook it, to keep that soft fluffy texture.

2-Minute Microwave Pancake Muffin in a Mug

Ingredients


Directions
Gently spoon pancake mix into a 1/3 cup measuring cup and level it off with the back of a knife. Microwave butter in a microwave safe mug, until melted. Add water followed by pancake mix. Gently stir the ingredients together with a fork until just blended. Batter will not be perfectly smooth, do not over-mix. Microwave on 50% power for 1-2 minutes*, until batter has just cooked through and is no longer wet. Serve warm with syrup or toppings of your choice. Pancake muffin is best enjoyed right after cooking.
*Please note that cook time will vary depending on the wattage of your microwave. To prevent it from getting dry and rubbery, check at the minimum baking time so it does not overcook, to keep it fluffy and moist.


Flavor Options

  • Blueberry Pancake Muffin: Gently stir in 2 tablespoons of fresh or frozen blueberries just before cooking.
  • Banana Nut Pancake Muffin: Reduce water to 1 tablespoon and add 2 tablespoons of mashed banana and 1/8 teaspoon cinnamon. Gently stir in 2 tablespoons of chopped nuts (or chocolate chips), just before cooking.
  • Chocolate Chip Pancake Muffin: Gently stir in 2 tablespoons chocolate chips just before cooking.
  • Confetti Pancake Muffin: Gently stir in 1 tablespoon of rainbow sprinkles just before cooking.
  • Apple Cinnamon Pancake Muffin: Reduce water to 1 tablespoon and add 2 tablespoons of applesauce and 1/8 teaspoon cinnamon in with the liquids.
  • Lemon Poppy Pancake Muffin: Add 1/4 teaspoon lemon zest and 1 teaspoon lemon juice in with the liquids. Gently stir in about 1/2 teaspoon poppy seeds just before cooking.
  • Espresso Chip Pancake Muffin: Gently stir in 1 teaspoon of instant espresso powder and 2 tablespoons of chocolate chips, just before cooking.
