Bite-sized little baby potatoes stuffed with all your favorite toppings, great for game day, a BBQ, the perfect party appetizers, or a fun dinner addition!

The tiny little warm, fluffy baked potato is the most adorable vessel for enjoying this scaled down version of a classic comfort food and it is so much fun to serve with all the fixin's.
You can create a little mini baked potato bar for people to create their own, or serve them fully loaded.
They start with a bag of little baby potatoes. I found these in a 2lb bag at the grocery store by the other potatoes, but you can use little red potatoes, or whatever you can find.
Rinse and dry.
Then, toss the potatoes in a little olive oil, salt and pepper. until completely coated and place the potatoes on foil lined baking sheet and bake.
Now comes the fun part! Slice 'em open and lay out the toppings!
I like to pile on a little sour cream, some shredded cheese, crumbled bacon and some chopped green onion to finish it off.
Fully loaded and ready to serve.
- 2lb small potatoes, baby Yukon gold or red skin potatoes
- 1-1 1/2 tablespoons olive oil
- 1/2-1 teaspoon salt, or to taste
- 1/4 teaspoon pepper, or to taste
- toppings: sour cream, chopped green onion, crumbled cooked bacon, shredded cheddar cheese
Preheat oven to 450 degrees F. Rinse and scrub potatoes under cool water. Dry with a paper towel. In a large bowl, toss the potatoes, olive oil, salt and pepper together until completely coated. Place the potatoes on foil lined baking sheet and bake for about 35-45 minutes, or until tender when pierced with a fork.
Remove from the oven and let cool slightly. Once cool enough to touch, cut a small slit in the top of each potato. Top with desired toppings. Serve warm.
