You can create a little mini baked potato bar for people to create their own, or serve them fully loaded.

They start with a bag of little baby potatoes. I found these in a 2lb bag at the grocery store by the other potatoes, but you can use little red potatoes, or whatever you can find.

Rinse and dry.

Then, toss the potatoes in a little olive oil, salt and pepper. until completely coated and place the potatoes on foil lined baking sheet and bake.

I like to pile on a little sour cream, some shredded cheese, crumbled bacon and some chopped green onion to finish it off.

Ingredients
- 2lb small potatoes, baby Yukon gold or red skin potatoes
- 1-1 1/2 tablespoons olive oil
- 1/2-1 teaspoon salt, or to taste
- 1/4 teaspoon pepper, or to taste
- toppings: sour cream, chopped green onion, crumbled cooked bacon, shredded cheddar cheese
Directions
Preheat oven to 450 degrees F. Rinse and scrub potatoes under cool water. Dry with a paper towel. In a large bowl, toss the potatoes, olive oil, salt and pepper together until completely coated. Place the potatoes on foil lined baking sheet and bake for about 35-45 minutes, or until tender when pierced with a fork.
Remove from the oven and let cool slightly. Once cool enough to touch, cut a small slit in the top of each potato. Top with desired toppings. Serve warm.
