It takes just minutes to whip it together, pop it in the microwave, and let it chill in the fridge while you have dinner, and voila. Since the cream cheese is the start of the recipe, make sure to use the best quality. I always use Philadelphia Cream Cheese. It is made with fresh milk and real cream, with no preservatives, so it will give you the best-tasting results, every time!



Easy 3-Minute Microwave Cheesecake in a Mug

Yield: serves1

Ingredients

  • 2 graham cracker sheets, finely crushed
  • 1 tablespoon. butter, melted
  • 2 oz. Philadelphia Cream Cheese spread, room temperature
  • 2 tablespoons white sugar
  • 2 tablespoons sour cream
  • 1/4 teaspoon vanilla
  • 1 tablespoon of a beaten egg


Directions
Combine graham crumbs and butter; press onto bottoms of a microwave-safe mug (pre-spray mug with cooking spray if you want to remove cheesecake after baking).

Mix Philadelphia Cream Cheese with a fork until smooth (microwave it for a few seconds to soften and remove lumps, if needed). Mix in sugar, sour cream and vanilla until smooth and thick. Beat an egg in a separate cup and measure out 1 tablespoon of the egg. Add to cheesecake mixture and mix well, until fully incorporated. Pour over crumbs.

Microwave at 50% power for 1 min. If needed, cook at 50% power an additional 20-40 seconds until edges begin to set, but it is still a little wet and shiny in the center. Do not over cook. Cool for 10 minutes, before placing in the fridge to cool and set for at least 1-2 hours, or overnight.
