Cool, creamy 3-ingredient ice cream, made from entirely all-natural, non-dairy, ingredients, for a perfect healthier alternative to traditional ice cream, in just minutes!
This stuff is so easy to whip together in the blender and you don't even need an ice cream machine, or any special ingredients to make it! The best part is, it is sooo versatile, you can create just about any flavor to the banana "ice cream" base.
All you need are 3 ingredients. The ice cream is made with frozen ripe bananas and milk of your choice (we used coconut), plus a mix-in ingredient of your choice to create your custom flavor.
I added some freeze dried strawberries to mine, but you can also use frozen fruit as well to create any fruity flavored combo you like.
For Michelle's version, we added peanut butter cups to the base, for a totally indulgent twist, without all the cream and sugar from the actual "ice cream". You can swap out the pb cups with just about any cookie or candy, from crushed Oreos for a "cookies & cream", to M&Ms, or even try adding a little mint extract and mini chocolate chips for a mint chip version!
Then comes the best part... the chocolate fudge ganache topping! This stuff is so easy and you only need 2 ingredients to make it, coconut milk and chocolate.
It is sooo thick and luxurious and creamy, and can be made vegan with dark chocolate and coconut milk! Then, make some "toppings" and you are all set!
You can eat the "ice cream" right from the blender to the bowl, for a soft serve style treat, or freeze it to firm it up and scoop it like a traditional ice cream! Either way, this stuff is sooo good and comes with a lot less guilt than eating regular ice cream that is loaded with sugar, heavy cream and other ingredients.

Ingredients
- 3 ripe bananas peeled, broken into quarters and frozen overnight
- 1/4 cup coconut milk (or milk of choice: regular, almond, soy, etc.), more if needed
- 1/2 cup freeze dried strawberries, plus extra for topping* (may sub 1 cup frozen strawberries)
Add frozen bananas and coconut milk to food processor or blender. Blend on high until combined and creamy, adding additional milk as needed. Add strawberries and pulse until combined.
Enjoy immediately for a soft serve texture, or freeze for a firmer traditional ice cream texture. Serve with chocolate ganache and extra strawberries on top, if desired. Store leftovers in an airtight container in the freezer.
Chocolate Fudge Ganache
Ingredients
- 1 cup full fat coconut milk (refrigerate overnight to firm up and solidify)
- 10 oz semisweet or dark chocolate chips
Directions
Heat coconut milk and chocolate chips over medium heat in a small sauce pan, stirring until smooth. Remove from heat and let sit to thicken.
