A nutritious twist on a classic ice cream sandwich! Instead of cookies and traditional ice cream, we’re using graham crackers to sandwich a creamy Greek yogurt based filling that’s low fat and loaded with nutrients!

These are everything you love about a traditional ice cream sandwich, but you can even eat these for breakfast because they’re packed with all the vitamins, minerals and protein that you don’t get in regular ice cream, so you definitely feel a lot better about enjoying them.



These are great for a grab and go breakfast, an after school snack, or a fun party treat. kids love them, adults love them and they’re really easy to whip together.




You can even fold in your favorite toppings like some fresh or dried fruit, chopped nuts, granola or sprinkles to really customize them, so these are really fun if you want to put out a variety of mix-ins and let the family make their own the night before, and then enjoy them the next day for a special treat.






Skinny Strawberries & Cream Frozen Yogurt Ice Cream Sandwiches (for breakfast!)

Yield: 6

Ingredients
  • 1 cup vanilla Greek yogurt
  • 1 packet Carnation Breakfast Essentials® powder, any flavor
  • 1 ½ cups thawed whipped topping (about half an 8 oz container; original, lite or fat free)
  • ⅔ cup chopped strawberries (or fruit of choice)
  • 12 graham cracker squares, (6 sheets broken in half)

Directions
Mix together yogurt and Carnation Breakfast Essentials. Fold in whipped topping and strawberries. 

Lay 6 graham cracker squares on top of a piece of foil and fold up the sides, creating a rectangle pan. Remove graham crackers and spread yogurt mixture into prepared pan in an even layer. Freeze for at least 4 hours or overnight.

Once frozen, peel away foil. Slice frozen yogurt mixture into 6 squares with a sharp knife. Assemble and serve immediately or wrap individual sandwiches in plastic wrap or an airtight container and store in the freezer.
