Instant Oatmeal Packet Cookies

Have left over instant oatmeal packets? These super duper simple oatmeal packet cookies are so easy to whip together and come out chewy, with crispy edges, soft centers, and a sweet nutty oat flavor.


You can start with any flavor oatmeal packet you like and some mix-ins that sound like a perfect match to really take your cookie up a notch and cut the cravings. My favorite mix-ins are raisins and semi-sweet chocolate chunks!




Instant Oatmeal Packet Cookies

Ingredients
  • 4 packets instant oatmeal ground up into a flour consistency in the blender (about 1 1/4 cup ground up- I like to use maple brown sugar for this; just the dry mixture from the packet)
  • 1/2 teaspoon baking soda
  • 6 packets instant oatmeal, any flavor (just the dry mixture from the packet)
  • 1/2 cup avocado oil (may also use canola/vegetable oil or melted unsalted butter)
  • 1/3-1/2 cup white sugar or agave 
  • 1/4 cup applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2-2/3 cup mix-ins: raisins, chopped nuts, chocolate chips, etc

Directions

Preheat oven to 350 degrees F and line cookie sheet with parchment paper. 

Blend 4 packets of instant oatmeal and baking soda in a blender, until it resembles a flour consistency; pour into a large mixing bowl. Add 6 more packets of instant oatmeal (not ground up) to the bowl and stir together. Add oil, sugar, apple sauce, egg and vanilla extract. Stir everything together until incorporated. Fold in mix-ins of your choice.

Scoop (about 1 1/2-2 tablespoons each) onto prepared baking sheets. Bake 14-18 minutes, until cookies start to turn golden brown but centers are still soft and puffy (they may look slightly under cooked but will set and firm up upon cooling). Let cookies cool on baking sheet before transferring them to a wire rack to cool completely. Store at room temperature in an air tight container for a few days, or freeze for a few months.
