{VIDEO} Easy Pancake Mix Biscuits with Whipped Fruity Butter Spread

Super simple fluffy buttermilk biscuits with only 4 ingredients and my easy whipped fruity butter spreads to go along with it!


 These are perfect for serving at breakfast time or for putting out a beautiful brunch spread with a variety of fruity butters to choose from.





So my secret for making these biscuits so easy, is using buttermilk pancake mix, because it already has all the flour, a little sugar, the leavening and even buttermilk, to make these super simple to whip together!


I love the homemade rustic shape of drop biscuits. Just scoop or spoon the dough right onto a cookie sheet and bake! No biscuit cutter, rolling, or flouring your work surface required!





So while the biscuits bake up, whip together some fruity butter spread to go along with them. So get out some pretty serving dishes...



Now, I always like to add a little butter to my biscuits and nice spread of jam on top, so my fruity butter recipe kinda combines the two into one gorgeous spread that you can make in just about any flavor. 


This recipe is great because since we’re using jars of fruit preserves, we can make this year round. Serve it with the warm biscuits and enjoy!

Easy Pancake Mix Biscuits with Whipped Fruity Butter Spread

Yield: 9 biscuits

Ingredients

Biscuits

Butter
  • 1/2 cup (1 stick) butter or margarine, softened 
  • 2-4 tablespoons fruit preserves or jam 

Directions
Preheat oven to 400°F.

Add pancake mix to a medium bowl. Use a cheese grater to grate in butter. Stir in milk and egg with a fork until dough forms. Drop 9 mounds of dough onto ungreased or parchment lined baking sheet. Bake 9-12 minutes or until golden brown.

With an electric mixer, beat butter on medium speed until light and fluffy, about 2-3 minutes. Mix in fruit preserve of choice, until combine. Butter recipe can easily be doubled or cut in half, to make a variety of flavors. Place in a bowl for serving. Refrigerate to firm up if desired, or serve immediately with biscuits.
