Strawberry Truffle Rats

Like my Bloody Jelly Donut Eyeballs, these are not for the squeamish, as they are pretty hard to take a bite out of, with out cringing at the thought of chomping into a rat! But when I tell you that these beady eyed rodents are made up of strawberries covered in a cookies & cream truffle mixture, adorned with sprinkles and chocolate chips, you won't think twice once you sink your teeth into them. 



Strawberry Truffle Rats

You will need
  • 1 (16 ounce) package Oreo Cookies
  • 1 (8 ounce) package cream cheese, room temperature
  • strawberries, leaves removed (insides)
  • chocolate chips (ears & nose)
  • red and white sprinkles from a bag of rainbow jimmies (fangs and eyes)
  • black licorice lace (tail)

Directions

Finely crush whole Oreo cookies in food processor, or by hand using a plastic sandwich bag and a rolling pin.  Set aside about 1 1/2 cups of cookie crumbs in a small bowl. Reserving about a tablespoon of cream cheese to use as a "glue" for the face, mix remaining cookie crumbs (about 3 cups) with cream cheese until well blended. You can blend them together with a fork or spoon, or squish the mixture together by hand! Once combine, roll the cookie/cream cheese mixture on top of a stemmed strawberry. This will be your rat body. 


Roll your rat body in reserved cookie crumbs.



Using your tablespoon of reserved cream cheese as a "glue", add a piece of black licorice rope for a tail, red jimmies for the eyes, white jimmies for the teeth, chocolate chips for the ears and a small piece from the tip of a chocolate chip for the nose.


You can even use your little rats as Halloween cupcake toppers! I added my Pretzel Stick Skeleton Bones and some seedless raspberry jelly to look like blood, for a totally creepy Halloween dessert spread.
