10 Minute Microwave Peanut Brittle

This quick and easy recipe, for a no fail peanut brittle is the perfect treat to whip up for any occasion. Instead of stirring a hot sugar syrup mixture over the stove, using a candy thermometer to get the mixture to crystallize to the perfect stage, this recipe uses a microwave. It's a great treat to bring for potlucks, holiday parties, or as a last minute sweet gift. Cooking times will vary depending on the watts of your microwave. It should turn a nice golden caramel color, without burning if watched carefully.


This recipe is so simple and comes out delicious every time. Whip up a batch in minutes and bring it to a party to impress everyone with this gourmet confection that seemingly took hours to prepare over the hot stove. 

Simply microwave sugar and corn syrup.

Add peanuts.


Stir in butter and vanilla.

Add baking soda.

Let the ingredients work their magic, and watch the brittle foam up into a light, airy mixture.

Spread onto greased baking sheet.

Create fun seasonal shapes with a cookie cutter, if desired.

Let cool and break into pieces or shapes.


10 Minute Microwave Peanut Brittle
Ingredients
  • 1 cup white sugar
  • 1/2 cup light corn syrup
  • 1-1 1/2 cups dry roasted, salted peanuts (sub cashews, seeds, or mixed nuts of your choice, if desired)
  • 1 tablespoon butter, unsalted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Directions

Line a baking sheet with parchment paper or foil and spray with non-stick spray, set aside. 

 Microwave sugar and corn syrup on High, in a large glass bowl or a 4-cup pyrex measuring cup:
  • 3 1/2-4 1/4 minutes in a 700-900 Watt microwave
  • 2 1/2-3 1/2 minutes in a 1000-12000 Watt microwave
Stir in peanuts (add a pinch of salt if using unsalted nuts) and cook until mixture is bubbly and starting to turn slightly golden:
  • 3-4 minutes in a 700-900 Watt microwave 
  • 2-3 minutes in a 1000-12000 Watt microwave
Stir in butter and vanilla. Microwave until lightly golden brown:
  • 1-2 minutes in a 700-900 Watt microwave
  • 45 seconds-1 minute in a 1000-12000 Watt microwave
Quickly stir in baking soda, mixture will foam up. Pour immediately onto prepared baking sheet and spread to desired thickness with a wooden spoon sprayed with non-stick spray. Press a cookie cutter into hot brittle creating as many shapes as you can before brittle hardens (optional). Let cool 15 minutes, or until set. Break into pieces. Package in cellophane bags for gift giving or store in an airtight container.
