So, I bought a box of Nilla Wafers and decided to get creative, and how could I resist making some adorable miniature treats?! I got creative and came up with stack of pancakes, a cheeseburger with fries, and an itty bitty layer cake all made with these simple little cookies. Perfect for April Fools Day, parties and more, you can even use them as cupcake toppers!
Girl Scout Cookie Pops
Yup, it's Girl Scout cookie season! Girl Scout cookies are everywhere and I can't help but buy a box (or 2 or 3) every time I pass by the girls selling outside the grocery store... because I too, was once a Girl Scout, giddy and excited to sell the most boxes for my troop (this was back where it was safe to go door to door). So with all this hard work selling cookies, what about some cookies for the girls? So I took some vanilla wafer cookies and created little Girl Scouts on a stick, aka "Girl Scout Cookie Pops"!

Today is the birthday of Dr. Seuss. He published 44 children's books including the bestselling Green Eggs and Ham and The Cat in the Hat. In his honor, I created some fun "Green Eggs and Ham" cupcake toppers and "Cat in the Hat" marshmallow pops that are simple to make and perfect for themed parties!
Peanut Butter Marshmallow Fluffernutter Cupcakes
It's National Peanut Butter Lover's Day! One of my favorite combinations are peanut butter and marshmallow, so I had to make some fluffernutter cupcakes to celebrate. The fluffy, buttery vanilla cupcake, stuffed with marshmallow fluff, is the perfect base for this creamy peanut butter frosting. Like a dessert version of a fluffernutter sandwich, YUM!
