The only thing better than a chocolate bar, sandwiched between gooey, marshmallowy goodness and a crunchy gram cracker crust... is if that chocolate bar was smushed inside a rich, fudgy chocolate brownie, of course!
So if you just want to indulge in your very own portion of rich, decadent, single serving deliciousness, that bakes up right in the toaster oven in minutes... this recipe is for you!
Simply, start by pressing your crust into the bottom of a single serving ramekin and pour your brownie batter right on top. I used a piece of parchment paper to line the ramekin so I could use it to lift the brownie out, once it is bakes, but you can skip the step and eat it right out of the dish if you prefer.
Bake in your toaster oven, or regular oven if you prefer. Broil the tops for just a few seconds to finish it off.

Ingredients
Graham Cracker Crust:
- 1/4 cup graham cracker crumbs
- 1 tablespoon brown sugar
- 1 tablespoon unsalted butter, melted
Brownie:
- 1/3 cup granulated brown sugar
- 2 1/2 tablespoons unsweetened cocoa powder, dutch process or dark
- pinch teaspoon salt
- 2 1/2 tablespoons vegetable oil
- 1 large egg yolk
- 1 1/2 teaspoons milk (or water)
- 1/4 teaspoon vanilla extract
- 3 tablespoons all-purpose flour
- 2 tablespoons chocolate chips, optional
- 7 regular size marshmallows or a handful of minis
Directions
Preheat the toaster oven (or regular oven) to 350 degrees F. Line a 7-8oz. ramekin (mine was 7oz., 3 1/4" wide and 2" tall) with a long strip of parchment paper across the bottom and up the sides. This will help you lift the entire brownie out with the crust once it has baked.

In a small bowl, combine the sugar, cocoa and salt. Stir in the oil, egg yolk, milk and vanilla until batter is no longer grainy and becomes thick, smooth and shiny, about 30 strokes. Fold in the flour followed by the chocolate chips. Pour batter over graham cracker crust.
Bake for about 20-25 minutes, or until an inserted toothpick comes out with a few moist crumbs sticking to it. Center of brownie will set completely upon cooling. Do not over bake.
Place marshmallows on top of brownie and place under the broiler setting of your toaster oven for about 15-30 seconds of until tops of marshmallows have slightly browned. Watch them closely as they can turn from brown to burnt in just a few seconds!
