Individual Single-Serving Baked French Toast Casserole

Pancakes or French Toast? For me, I'm happy with just about anything drenched in syrup, but a good french toast is definitely my #1 breakfast choice. This recipe is based on my favorite french toast recipe but is is scaled down for individual portions and is baked instead of made on the stove top so it has a wonderful crispy top and is studded with warm cinnamon streusel to really take it over the top!


This recipe can be made with any type of bread you choose, however, thick Challah or texas toast is my absolute favorite. Just make sure it is not a fresh, moist loaf. Day old bread works better for french toast because it can absorb more of the custard. I added a little flour and sugar to thicken the classic french toast egg/milk custard, ensuring a crisp, never soggy french toast. The use of thick bread gives the french toast a rich, melt in your mouth flavor, while the addition of spices, vanilla and cinnamon streusel give the french toast an amazing complexity of flavors that really take this breakfast to the next level.


To start, just whisk together the wet ingredients and toss in the pieces of bread until it has absorbed the liquid mixture.


Then, layer the soaked bread and streusel, in a small bowl or ramekin.


Bake until center is cooked through and top in golden brown.


Eat straight from the dish, or pull it out onto a plate and drench drizzle with syrup, whipped cream, fresh berries or topping of your choice!

Yield: 1 serving (may multiply recipe to yield more)

Ingredients

French Toast
  • 1 tablespoon flour
  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
  • 1 large egg
  • 1/4 cup half & half or milk
  • 1/2 teaspoon vanilla
  •  2 slices challah bread or texas toast, ripped into chunks
  • syrup, powdered sugar, whipped cream, fresh berries or topping of your choice for serving
 Streusel Swirl
  • 2 tablespoons flour
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon butter
  • 1-2 tablespoon chopped pecans or walnuts, optional

Directions

Preheat toaster oven (or regular oven) to 375 degrees F.

Whisk together the flour, sugar, cinnamon, egg, milk and vanilla in a bowl. Toss in the pieces of bread until it has absorbed the liquid mixture.

Combine all streusel ingredients. Add half of the soaked bread to the bottom of a small heat proof bowl or ramekin. Top with half of the streusel, followed by the remaining soaked bread. Top it off with the remaining streusel, creating a layered effect.

Bake for about 30 minutes in preheated oven, or until center is cooked through and top in golden brown.
