5-Minute Microwave Pumpkin Spice Mug Cake (egg-free, dairy-free, with low-fat and gluten-free options)

I love baking with apple sauce and mashed banana when I want a treat that is on the healthier side, but I get so excited when I can switch over to pumpkin this time of year, to create some really fun seasonal treats. The fact that this cake comes together in about 5 minutes makes it the perfect go-to dessert. The spice gives the cake a wonderful taste of autumn and the cinnamon glaze drizzle really makes you feel like you are indulging... but without the guilt of a mile high swirl of frosting!



To make this single serving treat, simply stir the wet ingredients to the dry ingredients, give it a little stir and pour the batter into a ramekin or mug and microwave on 50% power for 60 seconds at a time until done.


Let cool just slightly. Remove from ramekin (or eat right out of the dish) and drizzle on cinnamon glaze.

Single Serving Microwave Pumpkin Spice Cake

Yield: 1 ramekin-sized cake (2/3 cup batter)

Ingredients 
  • 4 tablespoons flour
  • 1/2 teaspoon pumpkin pie spice or cinnamon
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 tablespoons chopped nuts, optional
  • 1/4 cup 100% pure pumpkin puree (not canned pumpkin pie mix)
  • 1/4 cup packed brown sugar
  • 2 tablespoons vegetable oil*
  • 1/4 teaspoon pure vanilla extract
glaze
  • 1/4 powdered sugar
  • 1/4 teaspoon pumpkin pie spice or cinnamon
  • 1 teaspoon milk or water

*May sub half or all of the oil with equal parts apple sauce, for a low fat alternative.


Directions

Spray a microwave safe 7-8oz ramekin with non-stick spray (or skip this step if you want to eat your bread straight form the dish). In a small bowl combine flour spice, baking powder and salt. Add nuts if desired. Stir in pumpkin, sugar, oil and vanilla. Pour batter into prepared ramekin. Microwave on 50% power, 1 minute at a time, for 3-4 minutes, until toothpick inserted comes out clean or with a few moist crumbs. Do not over bake.

To make the glaze, simply stir all ingredients together and drizzle over cake. Enjoy warm.
