Red Velvet Pancakes

Ingredients
Red Velvet Pancakes:
- 1 cup Krusteaz Buttermilk Pancake Mix
- 1 tablespoon unsweetened cocoa powder
- 2/3 cups water
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
Cream Cheese Glaze:
- 4 oz cream cheese, softened
- 4 tablespoons (1/2 stick/2 oz) unsalted butter, softened
- 1/2 tsp vanilla extract
- 1 cup powdered sugar
- 1-2 tablespoons water or milk, or as needed
Directions
Pancakes:
Heat and lightly grease skillet or griddle. Whisk together pancake mix and cocoa. Stir in water, food coloring and vanilla. Batter will be slightly lumpy (Do not over-mix). Pour batter into a measuring cup with a spout and let stand 2 minutes. Pour slightly less than 1/4 cup batter per pancake onto griddle. Cook pancakes 1-1 1/4 minutes per side, or until cooked through, turning only once.
Cream Cheese Glaze:
Beat together cream cheese and butter until smooth. Add vanilla, powdered sugar and water or milk, beating until thin and creamy. Add extra liquid as needed until desired pourable consistency is reached. Drizzle glaze over pancakes.
