Adorable, sweet strawberry celebration cookies, bursting with festive rainbow sprinkles. These cookies are soft and chewy with a perfect little crunch from the sprinkles and are so easy to make, using a box of strawberry cake mix and just 4 ingredients!

These cookies are virtually fool proof, just stir together a box of any flavor cake mix you like, add in some eggs, oil to keep them extra moist and chewy, a little vanilla for flavor, and fun sprinkles, for the easiest, gourmet cookie ever! They are so fun and impressive and no one will have any idea that you used a cake mix to make these!
Even though these start with a cake mix, these cookies are not at all cakey. They come out perfect every single time, with ultra soft centers and a crispy edge. They have a chewy texture that you love from a cookie and are studded with crunchy little festive sprinkles throughout.
The dough comes out a little oily and sticky, so I like to pop the dough balls in the fridge before baking, so they don't spread too much and the dough can firm up a bit. Then, once you bake them, they puff up into perfect, puffy little cookies, with the prettiest pink color, that looks so cute with the rainbow of confetti sprinkles. I used confetti hear sprinkles, but you can use any kind you like (just don't use the little non nonpareil ball sprinkles, because the colors will bleed)
These are perfect for Valentine's Day, a baby shower, a Princess party, or a fun weekend treat that is quick and easy to whip together. It's also great for baking with kids, because these cookies are almost impossible to mess up and you can customize them however you like!
I love the combination of vanilla and strawberry, but you can get creative and use any flavor extracts you want, like lemon, coconut or almond. I've also made these with semisweet chocolate chips and even sprinkles!

Yield: about 2 dozen cookies
Ingredients
- 1 (15.25oz) box Strawberry cake mix
- 1/3 cup vegetable oil
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 cup rainbow confetti sprinkles or jimmies
Directions
Preheat oven to 350º F. Line a baking sheet with parchment paper.
In a mixing bowl, beat together the cake mix, oil, eggs and vanilla, until combined. Mix in sprinkles. Scoop dough, about 2 tablespoons each, onto the prepared baking sheet, at least 2 inches apart. Refrigerate dough for about 1 hour to firm up.
Bake in preheated oven for about 9-11 minutes, or just until the cookies are set around the edges.* Let cookies cool on baking sheet for 2-3 minutes before transferring to a cooling rack, to cool completely.
*Freezer Tips:
- If you do not plan on making all of the cookies at once, the unbaked cookie dough balls can be can be placed in a ziploc bag and refrigerated for up to 3 days or frozen for up to 3-4 months, to be baked in desired quantities. When baking cookie dough balls straight from the freezer, add about 1-2 minutes to the baking time.
- Baked cookies can be stored in an airtight container at room temperature for a few days or frozen for up to a few months.
