These are so easy to whip together, using pancake mix and cake mix, making them perfect to stir together for any birthday breakfast surprise, sleepover special, or Sunday morning treat.
Funfetti Birthday Cake Pancakes
Ingredients
- 1 cup buttermilk pancake mix
- 1 cup dry yellow cake mix
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup milk
- 1/4 cup rainbow sprinkle jimmies, plus extra for garnish.

Glaze:
- 3 cups powdered sugar
- 3 tablespoons milk
- 2 tablespoons salted butter, melted
- 2 teaspoons vanilla extract
Directions
Combine pancake mix and cake mix in a bowl and gently whisk to combine. Whisk eggs, extracts and milk in large bowl. Pour the flour mixture into the milk mixture and gently whisk until just combine. The batter should be thick and slightly lumpy. Do not over beat the batter, this will result in tough, dense pancakes. Let batter sit about 5-10 minutes. Place a non-stick skillet over medium-low heat.
Grease griddle/pan. Pour 2 tablespoons of batter 1-2 inches apart on pan for mini silver dollar size pancakes (shown), or 1/4 cup batter for larger pancakes.
Flip pancakes over when they start to bubble on top and are slightly dry around the edges and golden underneath. Cook until golden on bottom. This will take less time than the first side to cook, about 1 minute. Repeat with the remaining batter.
For the glaze, mix together all ingredients until smooth. Drizzle glaze over warm pancakes, top with more sprinkles and serve.
