{VIDEO} No Bake Christmas Tree Reindeer Cake

A no-bake cake made of gingerbread flavored rice krispies treats, frosting, rosemary trees and candy bar reindeer!

I used a basic rice cereal treat recipe for the cake and added some holiday gingerbread spice to it. You can use store bought or homemade frosting, then decorate!





Keep it simple, or really decorate it with a reindeer made of candy for a custom Xmas scene!


The trees are just made of Rosemary from the produce section of the grocery store! I snipped off the end and flipped it upside down to look like a little tree.





Dust it with powdered sugar to look like snow and make it extra festive! How cute did it turn out?! And it was so easy.

No Bake Christmas Tree Reindeer
 Cake
Yield: 6-inch cake (may use 8-inch cake pans, but the cake will not be as tall)

Ingredients 
  • 1/2 cup (1 stick) unsalted butter
  • 3/4 teaspoon ground ginger
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground clove
  • 2 tablespoons molasses
  • 2 (10 oz.) packages mini marshmallows 
  • 10 cups crispy rice cereal 
  • vanilla frosting (16oz store bought or 2 cups homemade)
  • fresh rosemary sprigs
  • powdered sugar, for dusting
  • gold star sprinkle, optional

Directions

Crispy Cake:
Line two 6-inch round cake pans with plastic wrap and spray with non-stick cooking spray. Melt butter in a large saucepan. Stir in spices. Add marshmallows, on low heat, stirring until fully melted. Turn off heat and pour over cereal, in a large bowl. Stir together until cereal is well coated.

Divide mixture between prepared pans. Press down with greased hands until flat and level, making sure the mixture is pressed into the corners of the pan. Place in fridge to cool until set, about 30 minutes.

Assemble:
Place first layer on a serving platter. Spread a layer of frosting on top. Place second layer on top, upside down. Cover the entire cake in frosting, using a spatula to give a rustic appearance.

Top with upside down rosemary sprigs for trees. Dust with powdered sugar. Add a gold star sprinkle on top of one of the trees, if desired. Add a candy bar reindeer pop.
