Watermelon Pizza is the perfect summer treat for play dates, BBQs, or a pool side snack. Watermelon wedges are topped with sweetened yogurt and a rainbow of fresh fruit. It's rhe perfect hand-held snack.
The size of the watermelon will determine how big of a pizza you'll get. The mini watermelons are perfect for individual sized pizzas, or use a jumbo watermelon, for a pizza to share. Just make sure to get the seedless kind.
The best part is that you can put any kid on fruit on your pizza. Let your kids make a rainbow, or just use their favorite fruit as the topping.
I like to add the yogurt topping after cutting, so the slices are neater looking, but you can definitely just spread it on to the watermelon round before cutting, too!
I like to do a variety like, raspberries, blueberries, strawberries, and blackberries, with pops of kiwi, and nectarines. Basically anything besides bananas and apples, because they turn brown once they are cut.
Watermelon "Pizza"
Ingredients
- 1 small watermelon
- 1/2 cup greek yogurt
- 2 tablespoons agave or honey
- juice from 1/2 lime
- toppings: fruit of choice
Directions
Cut the watermelon in half, width-wise, then cut off a slice of the watermelon about 2 to 3 inches thick. Cut the round into 6 wedges.
Mix together yogurt, agave, and lime. Spread a layer on top of each watermelon slice, leaving space at the top near the rind to look like a crust. Top each slice with fresh fruit of choice.
Serve immediately, or keep covered in the fridge until ready to serve.
