If buffalo wings and pizza had babies, they would taste just like this flatbread pizza. Topped with juicy rotisserie chicken drenched in spicy buffalo sauce, under a bed of cheesy goodness, and all topped off with cool ranch dressing, creamy blue cheese crumbles and a tiny little crunch of chopped green onion... you have got to try this!
Flatbreads are popping up on restaurant menus everywhere around here, so the future hubby thought it was really impressive that I was able to recreate these restaurant favorites at
home. Not to mention I created a meal out of his two all-time favorite foods, which just so happen to be a perfect game day snack for football season, that has taken over our living room every Sunday. But you can get creative and come up with any flavor profile you can think of to please the taste buds of your loved ones.
The best part is, this restaurant style flatbread comes together in about 10 minutes with the help of some bottled condiments, a store bought rotisserie chicken (or use leftover grilled chicken!), cheese, and the secret ingredient... a box of flatbread mix from Krusteaz, so you get that fancy artisanal flatbread in minutes. I promise I won't tell anyone it's from a box ;) So go ahead and take the credit for throwing together a bunch of super simple semi-homemade ingredients, for this "gourmet" recipe, so you can impress family and friends with your culinary skills on a whim.
I used the garlic & onion mix and it smelled amazing, even before baking it up. Once the dough has had a chance to rise, while the oven preheats, just roll it out, add some buffalo sauce and top with cheese. If you want a little less spicy alternative, you can mix the buffalo sauce with ranch dressing to cut the spice a little. (The mix makes TWO of the flatbread you see below!)
Then comes the fun... add the chicken tossed in buffalo sauce, along with some blue cheese crumbles, bake for only 7-11 minutes and it's done!
Finish it off with a drizzle of ranch dressing, some more buffalo sauce if you want it extra saucy, and a sprinkle of chopped green onions. Viola! I love the fancy, rustic shape of a flatbread pizza. Something about
them makes it feel so "gourmet", compared to a regular ol' round pizza. Not to mention that these mixes are deliciously fluffy and soft, with
their slightly crispy edges once baked.
Buffalo Chicken Flatbread Pizza
Yield: 2 (12-inch) pizzaz
Ingredients
- 1 box Krusteaz Garlic and Onion Flatbread Mix, plus ingredients on the back of the box
- 3/4 cup buffalo sauce
- 2 rotisserie chicken breasts, shredded
- 2 cups (8oz) shredded Monterey jack cheese
- 1/4 cup crumbled blue cheese
- 1/4 cup chopped green onion
- 1/4 cup ranch dressing, more if desired
Directions
Preheat oven to 475° F. Prepare Krusteaz Garlic and Onion Flatbread Mix according to package directions. On a floured surface, roll or pat the dough into 2 large ovals.
Toss the chicken in about 1/4 cup buffalo sauce. Set aside. Brush each circle with remaining buffalo sauce and layer with cheese, chicken and blue cheese crumbles.
Bake for about 7-11 minutes on a parchment lined baking sheet or pizza stone. Drizzle with ranch dressing and sprinkle on the green onion.
The flatbread mix makes a good amount of dough, you
can use it to make a bunch of mini buffalo chicken flatbreads as
appetizers or make 2 regular sized pizzas for dinner, like I did. I made
this one buffalo chicken for the man of the house, and out of the other
half of the dough, I made a BBQ chicken pizza for myself. (I made it basically the same way, just swapped out bbq sauce for buffalo, red onion instead of blue cheese and cilantro in place of green onion.)
