These mini granola bars bites are so simple, versatile and perfect lunch box addition, pre-workout snack, or morning grab-and-go breakfast! The glaze on top adds the perfect amount of sweetness, so you can cut the sugar in granola bar recipe in half and use a
fruit puree like extra mashed banana or some applesauce in place of the
oil for a
low-fat alternative, if desired!
These little granola bites are the perfect size and bake up nice and quick in a muffin tin!
Now, you can eat them plain like this, but my sweet tooth took them to the next level by adding a little glaze on top!
Chewy Glazed Granola Bites
Ingredients
- 1 3/4 cups quick cooking oats
- 1/4 cup all purpose flour (may use oat flour or whole wheat flour)
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- Optional 1/4-1/2 cup of mix-ins of your choice such as: wheat germ, dried fruits like cranberries, apricots, cherries, or raisins; seeds like sunflower, sesame, pumpkin or flax; even fun additions like crushed pretzel or graham cracker pieces, chocolate chips, shredded coconut flakes, M&M's, or candy pieces
- 1/4 cup vegetable oil*
- 1/4 cup honey, agave or light corn syrup
- 1/3 cup packed brown sugar
- 1/3 cup very ripe mashed banana (about 1 small banana) OR 1/3 cup apple sauce
- 1 teaspoon vanilla extract
Vanilla Glaze
- 1 cup powdered sugar, sifted
- 1 tablespoon unsalted butter, melted (optional)
- 2-6 teaspoons cream, half & half or milk
- 1/2 teaspoon vanilla extract
Chocolate Glaze
- 1 cup powdered sugar, sifted
- 3 tablespoons unsweetened cocoa powder
- 1 tablespoon unsalted butter, melted (optional)
- 3-6 teaspoons cream, half & half or milk
- 1/2 teaspoon vanilla extract
Directions
Preheat oven to 350 degrees F. Line a cupcakes pan with baking cups.
In a medium size bowl combine oats, flour, cinnamon and salt. In a separate bowl, combine oil, honey, brown sugar, banana and vanilla. Mix wet ingredients into the dry ingredients until well combine. Gently press into prepared pan and bake for about 15-25 minutes until lightly golden.
To make glaze, mix together all ingredients and spoon on top of granola bites.
Store in an air tight container or zip lock baggies at room temperature.
