Light, fluffy, smooth mousse-like "ice cream" made with pudding and cool whip, sandwiched between crunchy chocolate chip cookies... and they couldn't be easier!
I made chocolate, vanilla and strawberry cream using different pudding flavors to create neapolitan sandwiches, but you can make these with any flavor, even the sugar free kind. They make a great after school snack or weekend treat and are so easy that kids can help make them, too!
Start with your favorite cookies (homemade or store bought). I used chocolate chunk, but you can use any kind. Imagine using snickerdoodles with cheesecake pudding ice cream!!!
Then whip together the faux ice cream filling. It is sooo easy and comes together in 5 minutes! Just make sure the cool whip has been thawed in the fridge, so it is nice and fluffy.
Sandwich your cookies together and they are ready for the freezer.
You can even roll the edges in toppings if you like, to make these extra festive! Wrap them up individually and chill them in the freezer so the filling can firm up into a real ice cream-like consistency. It is soooo fluffy and creamy and dreamy, you wan't believe it is made of just pudding and cool whip!
Homemade Pudding Ice Cream Cookie Sandwiches
Ingredients
- Chocolate Chip Cookies
- 1 large (3.4oz) box instant pudding (flavor of your choice, original or sugar free)
- 1 1/2 cups cold milk (not the full 2 cups called for on the box)
- 8oz tub whipped topping/Cool Whip (lite, fat free, or original), thawed in the fridge
Beat pudding mix and milk together for about 2 minutes. Fold in thawed Cool Whip until smooth and fully incorporated. Place a large dollop of the pudding mixture on to the bottom side of 1 cookie and place a second cookie on top to create a sandwich.
Place on a flat plate or baking sheet and freeze until firm, about 1-2 hours. Serve frozen or wrap individual sandwiches in plastic wrap and store in the freezer up to 2 weeks.
