No-bake pie is so perfect to whip together for when you want a fast, easy, no-fuss recipe, without having to turn on the oven, that comes out perfect, every time, in under a half an hour. This is like a combination of a strawberry milkshake and a traditional cookie and cream cheesecake.

You start with a no-bake cookie crust. You can buy a pre-made one from the store, or make your own. It is super simple and only takes a few minutes. Then, we add the creamy, dreamy filling. The filling is a cream cheese base, with a little sugar to sweeten it up, some strawberry milk powder and vanilla to give it a creamy milkshake flavor, then we add the best part, the Oreo cookies! I like to fold them in by hand, to make sure the filling doesn't loose it's volume from the whipped topping, ensuring you get a bite of cookies and cream flavor in every bite.

You can definitely use fresh whipped cream instead of the tub of whipped topping if you prefer, I just like the convenience of adding the pre-made stuff to the filling, making this pie even easier.

I like to top it with a little more whipped topping and mini Oreo cookies, but you can skip this part, or use some of your regular Oreo's cut in half to put on top instead if you prefer. This pie can be eaten from the fridge for a softer, creamier pie, or from the freezer, for a filling that has more of an ice cream texture. I prefer the freezer texture, but either way is super delicious.

No-Bake Strawberry Milkshake Oreo Pie

Yield: 9-10 inch pie

Ingredients

  • 1 package Oreo cookies (36 cookies), divided
  • 5 tablespoons unsalted butter, melted
  • 1 (8oz) block cream cheese, room temperature
  • 1/2 cup powdered sugar
  • 1/3 cup strawberry milk powder (such as Nesquik: http://amzn.to/2vgGWGl)
  • 1 teaspoon vanilla extract
  • 1 (8 oz) container whipped topping (Cool Whip), thawed
  • 3 drops pink food coloring, optional
  • mini Oreo cookies, for garnish (may also use Oreo cookies cut in half instead)

Directions

Crust:
Crush 26 Oreo cookies into fine crumbs, using a food processor (or crush in a plastic ziploc bag). Mix crumbs with the melted butter until well combined. Press mixture evenly onto bottom and up the sides of a 9-10 inch pie plate. Place in refrigerator while preparing the filling.

Filling:
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy, until no lumps remain. Add the powdered sugar, strawberry milk powder and vanilla extract, beating until fully incorporated.

Set aside about 1/2 cup thawed whipped topping in a piping bag with a star tip. Scrape down bottom and sides of bowl. Gently fold the rest of the whipped topping (and a few drops of pink food coloring, if desired) into the mixing bowl. Chop remaining 10 Oreo cookies and fold into mixture. Spread evenly over crust. Top with swirls of whipped topping and mini Oreo cookies. Refrigerate or freeze for 2-4 hours (depending on whether you want a hard or soft pie), or until firm before serving.
